It all depends on what you want in life.
Some like 4 stripes a.s.a.p. while others prefer a (relatively) relaxed long haul lifestyle.
I'm not saying that having a command on an airbus or boeing is a bad thing, however the job security that you imply all depends on how flexible you are.
Sure, you can drag yourself from contract to contract, from one (sometimes questionable) outfit to the next, from the Middle East via Africa to SE Asia, but generally speaking all the good jobs are in seniority based airlines and there you will have to start in the right seat again.
Great that you have so many offers, but ask yourself
why these airlines are so desperate to get you to work for them... How come KLM can still be picky and openly discriminate against non KLS/NLS pilots, while some other airlines don't know what to do to stop pilots from leaving?
I just got a e-mail about contract where all you need is a Type Rating - no time on type requirement anymore.
Wow, that must be some fantastic outfit, captains without time on type and low time FO's! If that's no recipe for disaster, I don't know what is. Just imagine the requirements for the FO's you would potentially be working with: heartbeat and a valid licence..?

Let's assume that CX decides to throw some more routes in KA's direction, things can dramatically improve, however, as you said correctly, things can also stay stagnant for quite some time.
As the proverb goes: koffiedik kijken i.e. clear as mud, but in the mean time, life goes on, and one could be enjoying a nice lifestyle working for a good company with 3 stripes, while others are doing 4 sector 12 hour duty days with 4 stripes.
